Ingredients for 4 people:

  • 400 g smoked venison fillet
  • 40 g hard cheese
  • 50 g green radicchio
  • 4 artichokes 
  • extra virgin olive oil
  • salt and pepper


First rinse the artichokes, slice off the top quarter and stem and snip the ends of the petals off. Shred the artichokes and put them in a bowl with water and add the juice of one lemon.
Rinse the radicchio and drizzle with good olive oil. Now fry and season the artichokes and place them with radicchio and cheese – cut into long narrow strips – in the middle of the plate, the venison will be placed around it.
Finish the dish with a drizzle of olive oil and season with freshly ground pepper.
