Ingredients for 4 people:

  • 350 g horseradish
  • 3 potatoes
  • 1 leek
  • 50 g butter
  • 1 tbs breadcrumbs
  • 1 and 1/2 l vegetable stock
  • 4 slices brown bread
  • 150 g smoked goose breast
  • salt and pepper


Peel and dice the potatoes. Wash and julienne the leek. Grate the horseradish. Fry the breadcrumbs in butter, add leek and potatoes and gently stir for 10 minutes on medium heat. After 10 minutes put in the horseradish and keep on stirring. Now add the stock, bring to the boil and allow to simmer for one hour and a half. Season and serve in bowls. Finish the dish with toasted brown bread croutons, smoked goose and grated horseradish.
